Description: | The vineyards from which the high quality grapes come, although reduced yield, are planted on steep slate slopes. The climate of the area varies considerably temperature between day and night, helping to give a special flavour and maturing the wine. After the harvest, maceration, which lasts about 25 days is performed. The alcoholic fermentation, which ranges from between 7 and 10 days, takes place in stainless steel tanks at a temperature of 28. Malolactic fermentation occurs later in French oak barrels. Finally, the wine is aged in new and 2 year old French oak barrels for a period of between 14 and 16 months, ultimately aging in bottle. Torres Salmos was established in 1996 to honour the Carthusian monks, who planted the first vines in the Priorat in the year 1095. This is a wine that recalls the old ancestral legacy of this history. |
