Alexandre Chartogne does a fabulous job with this cuvée. Don't miss it. – Antonio Galloni. Sainte Anne is now aged and vinified in 228, 350 and 2000 liter drums. A small part of this Champagne aged in vats, mostly reserve wines. The Champagnes from our village need oxygen to deliver the message of the place. Each plot is vinified differently (topping or not, barrels of different origins etc). This makes it possible to obtain from this period of life of our Champagnes with unique characters and identifiable. Once the breeding of each plot finished, we assemble these origins of the village to deliver a wine that wants to be the most representative Merfy wines. The crystalline texture of wines from the sandy limestone terroirs of Merfy is sought, to keep the identity particular of our village. The Sainte Anne cuvée is a blend of several years of harvest. Often composed at 50% of the wines of the year preceding the launch bottle, and 50% older wines, from 2 to 5 years of reserve. No filtration is accepted by wines. The filtration would modify the textures of the wines too much and therefore the fat / salt balance in the mouth. The wines of Sainte Anne are assemblages of plots, but also blends of years. The wines of older harvests soothe and soften the lively and fiery character of the youngest wines. After aging in the cellar, Sainte Anne is disgorged with a Brut dosage which varies little from year to year. Dosage tests require a need of 4-7 grams of sugar for rebalance the aggressiveness and vigor of bubbles, without hiding or fattening the wine and its density. The liquor used is a liquor made with the same wine as that of the vintage which is disgorged. |
