Description: | Located in the village of Les Loges, Domaine des Fines Caillottes is the family estate of Jean Pabiot, which dates back to the late 19th century. Today it is run by Alain and his son Jérôme Pabiot, who represent the 4th and 5th generations respectively. It covers 29 hectares of choice sites in Pouilly Fumé, spread over 5 communes and fragmented in 30 parcels. The sites (around 200 meters above sea level) have varying terroirs, all of which combine to give the wine remarkable complexity and nuance. The main types are limestone covered with small white pebbles (caillottes); marl with fossilized oysters; and flint. The subsoil is clay-limestone. The vines average 20 years of age, and the oldest vines, totaling 3 hectares, are over 40 years old on very stony soils. We tasted and positively loved their Pouilly-Fumé made of 100% Sauvignon Blanc. It comes from 30 distinct parcels spread over 5 communes of the appellation. Grapes move quickly to the winery to minimize contact with oxygen, where they are de-stemmed and allowed to partially soak with the skins (6 to 7 hours) at low temperature before pressing. Fermentation begins spontaneously, with the natural yeasts present on the grapes and each site of origin is vinified separately. The gross lees are removed 3 weeks after the fermentation stops. The wine then develops for 4 – 5 months in tank on its fine lees, with occasional pumping over of the lees for enrichment and added complexity. The diverse origins are assembled in March. This Pouilly-Fumé has nuances of minerals, stones, citrus and green pear in a truly delicious style. |
