The grapes from his vineyards throughout the Chablis appellation are blended into one fabulously complex village wine cuv\u00e9e. He also bottles an extraordinary\u00a0premier cru\u00a0from Fourchaume, as well as a separate cuv\u00e9e of old-vine fruit in heavy, wax-sealed bottles after\u00a0\u00e9l\u00e9vage\u00a0in\u00a0demi-muid.
