The red wheat varietals farmed here have been line-select bread exclusively in this region for, in some cases, hundreds of years. Several thousand acres of this unique red wheat are harvested yearly and can be found nowhere else in the world. Decades of systematic growing trials have resulted in the continuous growth of superior-quality wheat with a truly authentic character. After harvest, the red wheat is transported, ground by a hammer mill, and prepared for the mash. Thereafter, it is met with Yellowstone spring water, Americas most pristine water source flowing from the Grand Tetons, through the Yellowstone, into the Gallatin valley.
