The grapes are semi-dried for 30 days in small wooden boxes before pressing, coaxing out velvety Amarone-like textures and flavors of bitter chocolate, dusty plums, figs, sweet cigar and blackberries. A well-rounded, dense wine that is surprisingly full of layers and finesse. |
