Description: | Founders Brian Polen and Brandon Doughan met at a mutual friend's wedding in Japan; after touring a small mountaintop brewery producing handcrafted sake, they decided to start a brewery in Brooklyn, New York. Read this New York Times piece for more information about Brooklyn Kura's founding and operation. Their sakes are all Junmai-style and brewed using only four ingredients--rice, water, yeast and koji. A blend of calrose and yamada nishiki rice is milled to more than 60% and fermented cold and slow. All rice is grown and polished in California/Arkansas and the water is Brooklyn's finest. Off-dry, light-bodied and pleasantly acidic, #14 is aromatic, fruit forward--think apple, melon, banana, lemon peel--grassy and clean. Excellent paired with sushi, seafood, charcuterie, creamy cheeses and big salads. Serve chilled. |
