After de-stemming and pressing, the must macerates and ferments in stainless steel tanks for 15 days at a controlled temperature of 79 degrees Fahrenheit. Malolactic fermentation in wood. 36 months minimum. The wine is aged for 22 months in medium-toasted French barriques, and then 14 months refinement in bottle prior to release. |
