Description: Review All of the Neumeister wines are made in the same way and with the same goal: to be food-friendly, well-structured and age-worthy, even in the entry qualities that spend less time on the lees than the crus, Erste Lage (1stk) and Grosse Lage (gstk). That means all the wines are macerated for up to 20 hours, fermented with indigenous yeasts in traditional oak casks at 23 to 24 degrees Celsius (which can partly take up to four months). The wines are kept on the gross lees until December or January before they are racked to mature on the fine lees until the bottling. The Steirische Klassik wines are bottled in March, the crus in summer. Since the Klassik wines are sourced in different vineyards, the harvest of one and the same grape variety can take 14 days.
