Currently, I am a \u0026#39;Master of Wine\u0026#39; student and hope to have a first attempt at the exam in June 2013. \n\t \n\t\t\u0026nbsp; \n\t \n\t\tMy Dad (Alan Plunkett), first planted vines in 1968 - the year I was born. My first vintage was as a cellar hand in 1986 dragging hoses at Tisdalls\u0026#39; winery in Echuca. After studying economics at university I came home in 1991 to look after the emerging Plunkett wine business. I captained this business, Plunkett Wines, for 14 years before becoming Chief Winemaker at Plunkett Fowles in 2005. During my 6 years at Plunkett Fowles some thousand of tonnes were crushed and wine was sent around the world. \n\t \n\t\t\u0026nbsp; \n\t \n\t\tI now take great pleasure in working with my wife, Bronwyn Dunwoodie, in our new start business Wine by Sam, making wine from all around our home state (Victoria), and with a keen eye open to make a red wine which can live for 30 years from fruit grown on the family vineyard in the Strathbogie Ranges of Central Victoria. \n\t \n\t\t\u0026nbsp; \n\t \n\t\tThere is a special satisfaction working with wine - it is alive. A lot of winemaking is unromantic hard work. But there is a creative element. I used to play a lot of music and there were moments when the band hit a groove and it all went up a level. In music or art I think those moments of creativity can pop out of nowhere. With wine the creativity is a long slow build. It can be quite an intellectual pursuit imagining a wine and then working with nature to gently nudge the wine in the direction you want to take it. But like when the band finds its groove, when it all comes together there can be that same sense of elevation and wonder as your senses drink it in. (Either that or I\u0026#39;m pissed!) \n\t \n\t\t\u0026nbsp; \n\t \n\t\tWine is my hobby as well my job. It\u0026#39;s often part of the dinner table conversation and it\u0026#39;s my bedside reading. I\u0026#39;ve had the pleasure of working with my parents when I started making wine, and these days enjoy running the winery with my wife Bron. It is simply a part of our everyday life, the vineyards are our backyard, the winery is our workplace and at the end of the day there is a glass with dinner. Our children Edward (8) and Felix (11) helped leaf pluck a special parcel of Lagrein, (a northern Italian red variety) this year. They attempt to make a bottle of wine for Grandma each year and this vintage enjoyed foot stomping the Cabernet. \n\t \n\t\t\u0026nbsp; \n\t \n\t\tI don\u0026#39;t want to overstate it, Bron and I would have worked to re-establish a wine business regardless, however, Naked Wines has shown such confidence and support which made our start up easier. We harvested in four passes through the middle part of March with the first pick on the 12th and the last on the 24th. We crushed into 13t fermenters which use a submersible pump called a 'Turbo Pigeur' to lift fermenting wine from under the cap of skins and homogenise the skins and juice to help extract colour, flavour and tannin. Its an amazing pump and can shift up to 1tonne of fermenting wine each minute! We inoculated with a pure yeast culture (arwi 796) and targeted a coolish 23c ferment. We also inoculated for malo lactic ferment at the beginning of primary ferment. There is research showing that a co-ferment of primary and Mlf together results in a wine with deeper colour. The wine was matured in oak for around 14months, most of this oak American. But the oak story is more complicated than this - I really like Ap Johns (an Australian cooper) 475l barrels made from oak grown in the Shenandoah mountain range in Virginia and Western Virginia Usa. This tight grained oak gives a sweet spice which is more typical of French oak, and the oak tannins help express the plush texture of this vineyard. We also trialled splash racking some of Tait's Shiraz to get oxygen into the wine when it was young to test the belief that this improves density of colour and plushness of tannins, but in truth I couldn't pick a favourite between the splashed and more carefully handled wine. Both wines looked great!","grapeDescription":"","tastingNotes":"This Shiraz has a deep red colour and is quite aromatic with blackcurrant, cherry and a sweet spice note. There is also a chocolatey note which is partly a trait of Heathcote fruit, and partly form the time spent in new oak barrels. And this is an odd thing for me to mention but some wine commentators will say that the overt vanilla oak flavour is too much, but I love it in this wine! Tannins feel plush and supple in this rich and full bodied Shiraz.","openingAdvice":"Best served at 60-64\u00BAF.","ageingAdvice":"I happily drink this wine as a youngster - I love the combination of plushness, intensity of flavor and balance it has now. But this wine also has an impressive ability to age. ","localFoodMatch":"Ideally we'd have a piece of aged beef to go with this Shiraz. I really like beef off the barbecue with some hickory on the coals - the wood smoke is a lovely match for the sweet smokey oak character in Tait's Shiraz. Shiraz","alcoholStrength":14.4,"originForWines":"As is often the case with the best wines, the winemaking is pretty straight forward - we are just trying not to mess up great fruit! We harvested in four passes through the middle part of March with the first pick on the 12th and the last on the 24th. We crushed into 13t fermenters which use a submersible pump called a 'Turbo Pigeur' to lift fermenting wine from under the cap of skins and homogenise the skins and juice to help extract colour, flavour and tannin. Its an amazing pump and can shift up to 1tonne of fermenting wine each minute! We inoculated with a pure yeast culture (arwi 796) and targeted a coolish 23c ferment. We also inoculated for malo lactic ferment at the beginning of primary ferment. There is research showing that a co-ferment of primary and Mlf together results in a wine with deeper colour. The wine was matured in oak for around 14months, most of this oak American. But the oak story is more complicated than this - I really like Ap Johns (an Australian cooper) 475l barrels made from oak grown in the Shenandoah mountain range in Virginia and Western Virginia Usa. This tight grained oak gives a sweet spice which is more typical of French oak, and the oak tannins help express the plush texture of this vineyard. We also trialled splash racking some of Tait's Shiraz to get oxygen into the wine when it was young to test the belief that this improves density of colour and plushness of tannins, but in truth I couldn't pick a favourite between the splashed and more carefully handled wine. Both wines looked great!","grapeDescription":"","tastingNotes":"This Shiraz has a deep red colour and is quite aromatic with blackcurrant, cherry and a sweet spice note. There is also a chocolatey note which is partly a trait of Heathcote fruit, and partly form the time spent in new oak barrels. And this is an odd thing for me to mention but some wine commentators will say that the overt vanilla oak flavour is too much, but I love it in this wine! Tannins feel plush and supple in this rich and full bodied Shiraz.","openingAdvice":"Best served at 60-64\u00BAF.","ageingAdvice":"I happily drink this wine as a youngster - I love the combination of plushness, intensity of flavor and balance it has now.
