A divine treat from Tatsuriki who make this tantalizing sake using super-premium Yamada Nishiki Special "a District" rice, (hence the term "Tokubetsu" or "Special") in the name. This Sake is made using Kimoto method-- which refers to the old-fashioned way of mashing a barrel of steamed rice by hand, by using a long wooden paddle. The process is labor-intensive, and the rewards go to whoever gets to drink this lovely, creamy and slightly earthy sake. This particular sake, with its rich, creamy character, and full-bodied texture, reminded us of a bowl of Lucky Charms cereal. It is afterall, magically delicious. Enjoy chilled or warmed. Tatsuriki has a big focus on the terroir and differences in the soil used to grow their grand cru Yamada Nishiki in Hyogo Prefecture. More than 20 years of research was done on the soils that grown their Yamada Nishiki, resulting in significant findings on how the mineral and soil compositions affect the flavor profile of the rice. For example, the magnesium content in the soil and rice affects the sharpness and bitterness of sake. These differences translate into three of their most distinct sake, each representing a different rice growing area of Hyogo. They also carry a few more affordable options (less terroir focused) that pair very well with food!
