Here, as in Bordeaux's Right Bank, it doesn't play second fiddle to half-brother, Cabernet Sauvignon, and speaking of Bordeaux, this Merlot-piloted blend from Airfield contains each of the variety's colleagues from its home turf. Even Petit Verdot, which is typically found in the vineyards of the Left Bank makes an appearance, well suited to the hot dry conditions east of the Cascades. Serving Suggestion: Filet mignon w/ sautéd flat beans & boiled fingerling potatoes w/ chives. Hearty empanadas w/ mole, sweet potato, & tempeh (or dark meat of turkey for a more carnivorous option). |
