Description: | We are a winery that has historically eschewed the bland pedestrian commercialized varieties like Cabernet Sauvignon and Chardonnay because of the popular, yet heavy headed winemaking style and the pretension that surrounds these wines ostentatious palates that they attract. So for us to induct said pedestrian wine into our House, we really needed to give him a thorough make over. Et voila, Cabernet Sauvignon redefined and transformed from a stodgy, vanilla and toasted brut, to a fine and upstanding citizen of the Big House. Surveillance. The Usual Suspect Cabernet Sauvignon is a bomba de fruta, replete with a vibrant and enticing nose that draws the drinker to a very Big House state of mind. This Cabernet Sauvignon was coolly fermented and aged in neutral oak to give it a unique profile. We then added a soupçon of Grenache to this Cab to exercise its aromatic potential. Bang on the bars of the cell the Warden welcomes in our newest inmate. Food Pairing.
