This complex, bold and dry sake has the fresh melon notes associated with sake of high polish rates, but there is much more to it than that. With its big boned structure and chewy texture it is on the other end of the spectrum for daiginjo sake and as a result, it can pair beautifully with a broader range of foods than simply prepared fish and vegetables.
