| Description: | Blend of 1-, 2-, and 3-year aged 100% spontaneously fermented beer originally brewed in 2018, 2019, and 2020. The beer was brewed with our Baileys Harbor well water, Pilsner malt, and raw wheat. Each batch spent a night in our koleschip to naturally cool and inoculate with local microflora, before spontaneously fermenting and aging in oak barrels for over two years. No yeast or bacteria was ever intentionally pitched into this beer. After blending, we naturally refermented the beer over many months in the bottle. |
