Description: The grapes used to produce our 2006 Shannon Ridge Lake County Cabernet Sauvignon were harvested from our Familys vineyards in the High Valley appellation in Lake County, California. The grapes were picked at the peek of ripeness at 26 Brix. The grapes were put through an early press with a slow extraction of color and tannins from the skins as well as 100% malolactic fermentation in French oak. Tasting Notes: Color: Black Pomegranate. Aroma: Toasty Crème Brulee, Ripe Cherry with dry cinnamon nuances and layers of black currants wrapped in plums. Flavor: Bing Cherries with toasty vanilla bean. Texture: Big, pallet encompassing tannin, supple and full, long finish with staying power and bold presence Region Description. Lake County is one of the smaller inland wine regions in California. Surrounded to the west by Mendocino and Sonoma Counties, and to the south by Napa Valley, Lake County's small concentration of vineyards lie in the Clear Lake AVA. The vineyard's here are nestled between steep hills to the west the lake shore. Main varieties grown in this area are Sauvignon Blanc, Cabernet Sauvignon and Zinfandel.
