| Description: | Prickly pear eau-de-vie produced in Agua Temazcal, Cuicatln, in the Sierra Norte of Oaxaca Maestro Destilador Rommel Krassel Distilled from 100% tuna (prickly pear) sourced near the distillery in Cuicatln Fermented in stainless steel for 1012 days using Champagne yeast Distilled twice in copper alembic pot stills Rested in glass 1 year before bottling Starchy and piquant aromas of taro root, fresh horseradish, jicama, and freshly julienned green apple lead to a high-toned palate of nopales underscored by candied peanuts. Sweet-tart candied hibiscus lands on a delightfully delayed finish. Approximately 200 liters produced each year 42% ABV The prickly pear is known in Mexico as tuna (ahem be careful not to confuse it with the fish) and is, in fact, the fruit of the paddle cactus (Opuntia ficus-indica). Savory and juicy pink bulbs blossom at the tips of the cactus leaves; the fruit is popularly used in everything from salad to ice cream. Bright and boldly aromatic, Edenicos prickly pear unquestionably stands out amongst the most unique eau-de-vie in the world. |
