It can be cellared for five to fifteen years after harvest. Producer Dating back to 1942, Bodegas Farina is one of the oldest wineries in the region of Toro. Salvador Farina founded the cellar in the deep, dark depths of an underground rudimentary cellar in the tiny village of Casaseca de las Chanas, 30km from Toro near Zamora on the banks of the River Duero. No-one was to know that these very humble beginnings were to be the start of one of Spain's leading wine estates. Manuel Farina inherited the winery from his father, Salvador, in the late 1960's following his return from his winemaking studies. He had learnt enough to know that radical change in the region was needed if it was to make first class wines. His unwavering belief in the region's potential and its local grape "tinta De Toro" set him in good stead to set about making those wines. Farina has always been the fearless promoter of Toro and was the initial driving force behind modernisation being the first to do almost everything; the first to bring forward the harvest to September to reduce alcohol levels from 17% to 13 - 13.5%; the first winery to install stainless steel fermentation tanks in their new winery in Toro; the first to understand the importance of balance and elegance in wines to be able to sell them; the first winery to export their wines; the first winery to understand how to sell bottled wine with a brand; and the list is set to continue into the future as Manu Farina, the third generation takes over. |
