This stellar range of high-quality, food-friendly wines is produced at the Cavit winery in Trentino, a picturesque landscape of mountains, lakes, apple orchards and medieval castles. Vineyards in this region enjoy the warming effects of the Ora del Garda, a dry, balmy breeze that sweeps across Lake Garda and protects the fruit from external moisture and disease. Contrastingly cool evenings promote rich, intense aromas and flavors in the grapes. Winemaking is overseen by Anselmo Martini, a 20+ year industry veteran and one of northern Italys top enologists. Production Area. Primarily Trentino and parts of Southern Italy. Grape Varieties. 40% Teroldego, 35% Merlot, 20% Cabernet Sauvignon, 5% Syrah. Vinification. Each grape variety is harvested and vinified separately, as each ripens at a different time. The bunches are carefully selected prior to crushing. After fermentation, which is carried out at a maximum temperature of 79°f in order to preserve the fruity aromas, the new wine is finished in stainless steel tanks and medium-sized barrels for about 12 months. Then the blend is made and the wine bottled. Color. Deep ruby red color. Bouquet. Pronounced fruit, with distinct aromas of violets and red cherries. Taste. A rich wine. Smooth palate with full and intense flavors of blackberry and plum complemented by velvety tannins and a well-balanced structure. Alcohol. 13%. Serving Suggestions. Pairs well with grilled meats and spicy foods. Serve at a temperature of 64°f. Bottle Region Description. Makes nearly as much wine as France, but lags behind in their classification system. As a result, Italian wine isn't taken as seriously as French wine. Most Italian wine is made from native grape varieties that don't grow well elsewhere, such as Nebbiolo and Sangiovese. The most important regions are Piedmont, where Barolo and Barbaresco dominate, Tuscany, home to Chianti, Montepulciano, and the Super-Tuscans (a collection of relatively new reds), and the Northeastern region, where you'll find Soave, Valpolicella, and Bardolino. Italy's soils and climates are varied and ideally suited for viticulture, from the Alpine foothills in the north to the Mediterranean coast in the South. Its hilly landscape provides sun and cooler temperatures, even in the warmest regions. Italy has two categories of fine wines. Docg, which means regulated and guaranteed place name, refers to a small group of elite wines. Dob wines are those with regulated (but not guaranteed) place names. A lower tier of table wines are grouped into IGT wines, which indicate the location on the label, and ordinary table wines, which carry no geographical indication except, "Italy."
