The Agave convallis used in this mezcal were cooked in an underground pit oven, milled by hand with mallets, fermented with open air yeasts, and double distilled in the small clay pot stills for which this region of Oaxaca is known. Chinga Quedito Mezcal Chinga Quedito Mezcal is a brand owned and operated by maestro mezcalero Bezaleel Arellanes in Santa Catarina Minas, Oaxaca. Mezcal from Bezas family has been available in the local community for many generations, and it became available in the Us for the first time in mid-2023.
