The name Jerez, which is the origin of the english word ‘sherry', identifies the region as the heart of the sherry-producing zone.A number of factors make Jerez suitable for the production of sherry. First and foremost, the soil has three variants, each imparting its own character to the individual styles of wine. The snow white 'Albariza', which is high in chalk and light in texture, produces the lightest styles of sherry from the Palomino grape variety. 'Baros' is high in clay with a little chalk, while 'Arenas' is sandy; these soils are best suited to growing Pedro Ximenez and Moscatel grapes. Equally important is the climate, which is influenced by both the cooling effects of the Atlantic Ocean and the warmth that originates in the eastern plains. The moist winds from the sea bring the temperatures down â€" not only assisting in the preservation of vital acidity in the sherry grapes, but also providing natural air conditioning for local wine cellars. This contributes to a slow and gradual maturation of the wines. The 300 days of sunshine which the region receives on average each year are also important in terms of achieving optimal ripeness for the grapes.
