This had the advantage of time and developed great aromatic, spicy notes of curry and an herbal touch of celery, deep flavors with pungent notes that last for a very long time and a creamy texture from the abundant small bubbles. It has a nice compromise between youth and development and power and elegance. It's tasty, finishing with an almost salty twist, and with time in the glass, it developed a peaty and smoky nose that made me think of some Islay malt whisky. 2,047 bottles and 494 magnums produced. All bottles carry the disgorgement date, but this wine always spends a minimum of 100 months in bottle. The bottle I tasted was disgorged in April 2022, so with a longer time sur lie. Luis GutiĆ©rrez, Wine Advocate. The hundred-year-old experience on their estate, its soils, its mesoclimates and the use of traditional varieties, means that even before the grape harvest they know which wine will be produced by the grapes on each plot. Once the fermentation has ended, they taste the wines in order to find out the potential and the expression of the vintage, always linked to our terroir. At Raventós i Blanc, they only have native varieties; varieties that with the passing of time and the generations have adapted perfectly to our terroir and our climate. In 2011, they started to uproot the foreign varieties and, at present, they only cultivate the following varieties: Xarello, Macabeu, Parellada, Monestrell, Bastard negre, Sumoll and Xarello vermell. The vineyards are worked entirely by man and horse - Raventos is perhaps the original garagiste. Raventós i Blanc is a winery with one of the longest documented winegrowing traditions in the world. The family farm where their wines are now produced has belonged to the Raventós family since 1497. Five centuries working 90 hectares of vines and forest, a dynasty closely associated with the land from one generation to the next. Today, Pepe Raventós, who represents the twenty-first generation of the family, farms 44 plots using biodynamic winegrowing methods and is committed to maintaining the estate of vines, wood and lake as a complete entity. Raventós i Blanc is faithful to tradition and upholds the relationship between man and nature at the very core of its production philosophy.
