Description: | The Biava estate started in the 1980s and is a mere 1.5 hectares in size located in province of Bergamo. Their specialty is passito and to us, the standout is their red Moscato from the smallest DOCG in all of Italy. This is a dessert wine that is red, with aromas of flowers, black pepper, sage, blood oranges, red berries and a good dose of fresh tannins. Hand-harvested, then the grapes are dried for 45 days before pressing and allowing fermentation to start with native yeasts. Drink in large glasses with chocolate fondant or your favorite cigar. Biava is located in Scanso which is near the capital city of Milan. This wine used to be used at Sunday mass during the Middle Ages. Surely if this were the practice today, churches would be filled to the gills. Truly decadent. Drink slightly chilled. Will age for decades. |
