| Description: | In northern Provence at 280-300 meters above sea level, the marine-originated soils here are mainly sandy, silty, stony, rich in limestone and low on clay. The vines range in age from 27 to 55 years old (average is 38 years as of 2022). The farming is certified-organic and the harvest is manual. The four varieties are picked and vinified separately. Each goes through a carbonic maceration of about 15 days, followed by a regular fermentation with indigenous yeasts only, all in tank. The wines are aged individually in 500-liter demi-muids for 6 months with periodic bâtonnage and without racking. The wine is blended and bottled without fining or filtration and with only a modest amount of sulfur (29 g/l). Though Domaine La Providence and its vines are within the Coteaux d'Aix-en-Provence AOC, the wine is a Vin de France because the particulars of the blend don't fit the appellation requirements. |
