Foot trodden, indigenous fermentation and roughly 35 days on skins before 12 months of barrel aging. Flavors of red cherry, raspberry, savory herbs, roses/violets, red plum, and a touch of cedar. The palate is linear and assertive with distinct tannin yet elegant framework. |
