Swirling the wine in your glass, aromas of black currant, ripe berries and baking spices greet you as you take a breath. Upon tasting, the flavors begin softly and move to a broad mid palate with notes of dark cherry and sage. A moderate finish shows well developed tannin and leaves a hint of dark chocolate and sweet oak behind. With proper cellaring, this wine will evolve beautifully for the next 10 to 15 years. Winemaking. Drawn from top Napa vineyards including Stagecoach and Kenefick Ranch, our Cabernet Sauvignon is handpicked and undergoes a triple sorting upon arrival at the winery. The grapes then undergo an extended maceration and a long, cool fermentation for increased flavor, color and aroma. Aged in 30% new French oak barrels, the wine matures for 18 months before being deemed ready for release. Our Napa Cabernet bottling is always blended with other Bordeaux varietals for their added aromatic and balanced tannin contributions. Technical Data:. Appellation: Napa Valley.
