| Description: | This is the second blend of Curves In Time, our oak fermented beer refermented on local Door County peaches. Unlike batch 1 of Curves In Time (released last summer), this year's version is a blend of 100% spontaneously fermented beer. The base beer spent a night in our koleschip to naturally cool and inoculate with local microflora, before spontaneously fermenting and aging in oak barrels for 1 and 3 years. After blending select barrels together, we refermented the beer on 430 lb of local Door County peaches over the course of several months before packaging. |
