| Description: | By allowing our Napa River Ranch Sauvignon Blanc grapes extended hang time on the vine, well beyond their normal maturity, we encouraged the natural progression of botrytis cinerea, a welcomed mold the French call "the noble rot." The botrytis mold lives on the skins of the grapes and beckons a distinctively lush, tropical character. The late harvest grape clusters are picked under strict criteria, and exacting fermentation in French oak barrels is a long and trying endeavor. After patient stewardship, the wine is truly extraordinary with honeyed apricot, ultra-ripe pear, coconut and creme brulée aromas. The unctuous texture is underscored by decadent flavors of honey, fig, vanilla and citrus that balances the touch of sweetness making this the perfect after dinner wine. |
