Description: | Paddy Borthwick, Sauvignon Blanc, Wairarapa, New Zealand 2019 100% Sauvignon Blanc Cantaloupe & Melon. Ripe Passionfruit. Lychee & Gooseberry. Fresh Acidity. Having only 3% of land under vine and contributing only 1% of total production, Wairarapa is home to many of New Zealand's smaller producers. This is where we find the Paddy Borthwick Estate. In 1985, Paddy, as a way to diversify his family's legacy of farming (over 75 years!), decided to train as a viticulturist and winemaker. In 1996, after working across the globe perfecting his skills, he and his father began planting what came to be Borthwick Vineyard. This Sauvignon Blanc, with a wonderful balance of acidity and tropicality, is a prime example of what the sub-region of Gladstone has to offer. The alluvial soil found throughout the vineyard allows for smaller, more concentrated grapes, ultimately intensifying their flavor. In the end, a quintessential New Zealand Sauvignon Blanc! Serving Suggestion: Grilled spicy grouper tacos w/ cilantro-lime crema & cotija cheese. Fish & chips. Grilled asparagus wrapped in bacon. |
