The name of the property comes from Mirar = to see and bau = nice that refes to the nice point of view that you have from the estate. The Domaine Mirabau is in deed on the terraces overlooking the left bank of the Canterrane river. An interesting legend has it that there was on the site of Terrats a city named Mirmanda, older than Barcelona, which was the land of fairies before being destroyed by a sharp rise of the sea waters. Geography:. This wine comes from South Roussillon in the production area of Cru Les Aspres, in the village of Terrats. The terroir is made partly of schist and partly of Quartz. The pre-Pyrenean plateau is very favorable to the maturity and richness of Mediterranean grape varieties. Vineyard For this cuvee, the vineyard covers 9 ha. The pruning method for Carignan, Grenache and Mourvedre is gobelet and Royat cordon for Syrah. The average yield is close to 38hl per hectare at the most. Red grape-varieties. This red wine is a blend of Grenache (40%) and Syrah (60%). Wine-making and aging:. The Syrah is vinified with carbonic maceration, Grenache in traditionall vinification. Maceration lasts at least 10 days with temperature control throughout the vinification. Depending on tasting, the maceration can last 3 weeks. Tasting and food-pairing:.
