Bone dry and medium-bodied with a nicely balanced acidity, Eyrie's Pinot Gris shows complex varietal aromas and flavors, with a smooth yet crisp and refreshing finish. A darling winemaker among sommeliers, Eyrie treats the Pinot Gris with the same respect as with their famed Pinot Noir. Fermented and aged in stainless steel sur lies, with natural malolactic fermentation, the aging process is slow and unforced, requiring a full year or more before bottling: more than twice the time allowed to most New World Pinot Gris. Over this time, the flavors captured during fermentation are released back into the wine. The result is freshness and seamlessness without heaviness. Pinot Gris, today, is the most widely planted white variety in Oregon, and the second most popular white wine in the States. Food Pairing: Very versatile. |
