We skipped the chill filtration process, so the liquid gets from barrel to bottle a little differently, Fred Noe, Jim Beams master distiller, said in a news release.After aging, bourbon typically goes through a chill filtration process, which involves forcing the liquid through a dense filter to remove fatty acids formed during distillation. The lack of chill filtering means the liquid looks a little cloudier compared to filtered bourbons, especially on the rocks, the release said.The result is unique to other Jim Beam offerings, with a fuller taste and longer finish compared to your typical bourbon, Noe said.The bourbon inside the bottle is aged five to six years and features a caramel sweetness with charred oak and light fruit notes, the release said.Without the cooling-down process, those compounds (often fatty acids and proteins) are allowed to remain in the spirit, adding flavors that other whiskeys typically wouldnt have. On the other hand, they also cause the whiskey to become cloudy if exposed to extreme temperatures or evaporation, which could be unattractive to some consumers, even though the whiskey inside is perfectly fine to drink â and Jim Beam Distillers Cut is more-than-fine for everyday sipping. |
