The climatic region is probably one of the coolest in the Clarksburg region. It is planted with four different clones: clone 23\/Mariafelder and three Burgundian clones: 115 \/ 667 \/ 777. Two clones, 115 and 667 are harvested at the same time and combined in a single tank as a co-ferment. It is a native fermentation that best expresses the vineyard terrior. Clone 23 and clone 777 are also co-fermented. The co-fermentation is also a classic Burgundian winemaking technique. The finished wine is barreled early to allow the secondary malo-lactic fermentation to occur in the barrel,. This enriches the wine and fixes a deeper red color in the finished wine.","grapeDescription":"","tastingNotes":"The winemaking techniques follow a very traditional and natural path. Using minimalist techniques will create a wine with more expression of the terrior\/vineyard. The co-fermentation gives the wine a more complex extractive quality using the support of each clone to enrich the wine. Native fermentation utilizes the existing microbial floral brought in from the vineyard to conduct the fermentation. The extraction and structure is slowed and gives the wine a more supple texture and balance. It also is a much lower yeast inoculation to slow the primary fermentation. This preserves the fruit and natural aromatics. Pressed at dryness, the new wine is rack to French oak barrels to complete the secondary fermentation. The wine is racked a second time to give some air to the new wine and continue to develop the color and aromatic qualities and return to the barrel to age until ready for blending and bottling. \r\nThe finished wine is an expression of this winemaking. It is a wine with development\/structure and complexity. It won't be a fruit bomb or like gnawing on an oak chair. The climatic region is probably one of the coolest in the Clarksburg region. It is planted with four different clones: clone 23\/Mariafelder and three Burgundian clones: 115 \/ 667 \/ 777. Two clones, 115 and 667 are harvested at the same time and combined in a single tank as a co-ferment. It is a native fermentation that best expresses the vineyard terrior. Clone 23 and clone 777 are also co-fermented. The co-fermentation is also a classic Burgundian winemaking technique. The finished wine is barreled early to allow the secondary malo-lactic fermentation to occur in the barrel,. This enriches the wine and fixes a deeper red color in the finished wine.","grapeDescription":"","tastingNotes":"The winemaking techniques follow a very traditional and natural path. Using minimalist techniques will create a wine with more expression of the terrior\/vineyard. The co-fermentation gives the wine a more complex extractive quality using the support of each clone to enrich the wine. Native fermentation utilizes the existing microbial floral brought in from the vineyard to conduct the fermentation. The extraction and structure is slowed and gives the wine a more supple texture and balance. It also is a much lower yeast inoculation to slow the primary fermentation. This preserves the fruit and natural aromatics. Pressed at dryness, the new wine is rack to French oak barrels to complete the secondary fermentation. The wine is racked a second time to give some air to the new wine and continue to develop the color and aromatic qualities and return to the barrel to age until ready for blending and bottling. \r\nThe finished wine is an expression of this winemaking. It is a wine with development\/structure and complexity. It won't be a fruit bomb or like gnawing on an oak chair.
