The heavy oak influence is immediately detected, followed by the 5 years of lees aging. Raw honey, bees wax, graham cracker and baked pears. The blend of 50% Chardonnay, 25% Pinot Noir and 25% Pinot Meunier shows complex textures, green fruits, brioche and lime zest. Far from delicate in style, this shows more power and classic yeast qualities. |
