2021 Juanvi Viticultor Quercus
| Description: | Whole bunches are hand-harvested, then whole grapes are destemmed but not crushed, and grapes undergo spontaneous fermentation with native yeasts with a three-week maceration and light punch-downs (without breaking the skins) for the delicate extraction of tannins and color in stainless steel tanks of 2000 and 3000 liters. Following pressing, the wine rests for six months in used two and three-year-old 400L French oak barrels. After aging in barrels, it is transferred to concrete tanks where it ages for a further three months. Juanvi wines are bottled without stabilization, clarification, or filtration. |
