Description: | Prefecture: Niigata. Rice: Gohyakumangoku. Rice Polishing Ratio: 33% (Daiginjo). Sake Meter Value: +2 (Neutral/Dry). Acidity: 1.2. This seasonal sake represents the early days of Spring, as the snow melts and the first buds sprout from the warm spring breeze. In order to preserve the refreshing flavors of the carefully selected rice, this sake was fermented at low temperatures and stored in frigid storage chambers during the cold winter months. Refreshing aromas of muscat and muskmelon accompanied by the harmony of sweet and sour hints of umami from the rice. Room temperature brings out the rich fragrance of flower blossoms. Best enjoyed with seafood and rustic vegetable dishes reminiscent of the feeling of Spring. Food pairings: Sashimi, Cold Tofu, Oden, fish cakes, deep-fried tofu, hard-boiled eggs, konnyaku and other vegetables. |
