Characteristics. The Premier Cru Chaponnières is located next to Rugiens bas in the heart of the. village of Pommard. Wine making. Grapes are destemmed and fermented in open vats for about 2 weeks. The wine. is then aged in French oak barrels between 15 to 18 months. Winemaker's comments / Gastronomy. Nice ruby cherry color, very bright. Elegant nose like all the Pommard from the. Southern part of the village, soft spices and red berries also. Elegant in the mouth, lively with a lot of energy. The acidity is usually quite soft, tannins are round. This Premier Cru is very accessible. Preservation. This wine can keep very well but can also be drunk 5 years after vintage. Region Description. (pee noh nwahr)—A tricky grape to grow, Pinot Noir makes some of the best wines in the world. The prototype wine is red Burgundy from France but Oregon, California, New Zealand, and parts of Australia also produce good Pinot Noir. The wine is lighter in color than Cabernet or Merlot with relatively high alcohol, medium-to-high acidity, and medium-to-low tannin. Its flavors and aromas can be very fruity or earthy and woodsy, depending on how it is grown. It is rarely blended with other grapes. |
