The vins clairs are half raised in stainless steel and half in older Burgundy casks. It aged for forty-four months sur latte prior to disgorgement in March of 2022; its finishing dosage is four grams per liter. The wine offers up a superb bouquet of pear, hazelnut, fresh-baked bread, dried flowers, chalky minerality, a touch of buttery oak and plenty of upper register smokiness. On the palate the wine is crisp, full-bodied, focused and complex, with a fine core and mineral undertow, elegant mousse and fine balance and cut on the long, classy finish. This is excellent non-vintage Blanc de Blancs. 2022-2040+.". They employ a 'non-dogmatic' approach to biodynamic farming, utilizing absolutely no herbicides or pesticides, and most vineyards are still worked by horse.
