The Côtes-du-Rhône Pic & Chapoutier has an extraordinary richness and complexity because of the diversity of the different soils which grapes are coming from (Drôme, Gard, Vaucluse, Ardèche). The different types of soil are composed of clay and calcareous alluvial deposit terraces, clay. Harvest. Harvesting is performed when grapes reach a good maturity. Vinification. The grapes are entirely destemmed. Vatting lasts around 2 weeks that provides a good tannic structure to the wine, allows its ageing and guarantees a good stability. Maturing. The wine is aged in vats. Pumping over allows the wine to be clarified. Tasting. Color: crimson-red. Nose: aromas of red fruits (mainly morello cherries) and spices (liquorice, grey pepper).
