This appassimento wine is a twist of the traditions of the Veneto (most famously, in its Amarones): iconoclast, Gino Fasoli, air-dries Pinot Noir grapes as if making Amarone! He did this because the historic estate was not allowed into the official Amarone appellation, and Gino loves Pinot Noir, which is not uncommon in Northern Italy.so why not? We were impressed by its suave & seductive style that slowly reveals a serious streak underneath. Best reserved for rich meals (see below) or as an after-dinner meditation wine. "The Pinot Nero Sande was born in the late 1980s, the fruit of an innovative vision for the Veronese territory. The low yields resulting from the pruning method employed create grapes that, at ripening, display an extraordinary concentration of sugars and aromas. The subsequent drying process further concentrates the full aromatic potential of the fruits, thus creating a wine that is unique in its category. Decanting: Strongly recommended, especially for older vintages. Recommended glass: Large tulip-shaped glass to best appreciate the complex bouquet. Sande is a wine with great structure that lends itself to numerous refined gastronomic combinations:. Red meat: Braised beef, Florentine rib-eye, fillet with green pepper. Game: Stewed venison, roast pheasant, wild boar hunter style. First courses: Pappardelle with hare rag, black truffle risotto. Mature cheeses: Parmigiano Reggiano aged 36 months, Monte Veronese dallevo, Stilton. End of meal: Excellent meditation wine.". Aged in barriques for up to 4 years.
