A former scientist, he's constantly experimenting with synthetics that do less harm and are more biodegradable than treatments allowed under certain organic certifications. Grown at high elevations on Marne Blanche and Volcanic soils, the Linsenhofer Spatburgunder undergoes spontaneous fermentation and is aged in 500L oak barrels from a nearby forest/cooperage. Delightfully fresh with notes of mushroom, forest floor and bright berries with a backbone of cool minerality. " |
