The fine folks at Pigeon have sacrificed a heaping helping of their marble bagels for the greater good in the ninth installment of our resurrection series: Kvass. Popular in the 16th century, traditional Kvass was fermented from stale rye bread and contained only trace amounts of alcohol. Our modern ode to the style begins with a malty, spicy rye base and a deep amber color. A whole lotta locally-baked Pigeon bagels lend additional body with a hint of caraway spice. Simcoe hops combine with the malt sweetness to produce a lingering orange-marmalade character.and if the people have no bagels, let them drink beer. – Abv: 6.2% |
