| Description: | • Primarily Garnacha with smaller complements of Bobal and Royal, from very old organically-farmed vineyards. • Vatting and foot-treading in stone lagares for 10-15 days, followed by de-stemming and transfer to stainless steel. • Spontaneous fermentation with indigenous yeast. • The wine is left to decant in stainless steel over the winter before transferred to used French oak for six months of additional élevage. |
