Description: | Chateau St. Vincent, Sauternes [375ml], Bordeaux, France 2015 {organic} 80% Semillon, 10% Sauvignon Blanc, 10% Muscadelle Apricot & Clementine, Honey, Spice & White Truffle Not just any mold, botrytis is a truly noble rot which contributes its fuzzy charm to the exteriors of late-harvested grapes destined for the world's most celebrated dessert wines. Sauternes, a southerly enclave of Bordeaux, is arguably the capital of this unexpected but beautiful phenomenon. The traditional Sémillon, Muscadelle, and Sauvignon Blanc grapes are concentrated by the fungus's leeching out of moisture from the grapes (a process which does nothing to endanger the health of the vines) into a decadent, nectary elixir which fermentation transforms into a decadent dessert wine (albeit one which is often not served with dessert). Serving Suggestion: Often served w/ savory hedonistic fare such as patés & decadent cheeses. Japanese sun-dried persimmons & other sweet, shriveled fruits. |
