Description: Wine maker notes Produced only in years of great maturity, this Extra-Brut is the result of a blend favoring the richness and the expression of the three grape varieties. No liquor at all is added "to round up" the wine before shipping : therefore it is essential to ensure that a subtle and pure harmony is achieved at the blending and allow more time than usually to mature slowly in the cellars. Producer Each member of the Boizel family is proud to be part of this wonderful story and to take their turn as the holder of the family traditions that have been passed from father to son (or daughter) since 1834. But beyond recipes, blending secrets and customs, every generation has strived to enrich the family tradition and to pass on the Boizel spirit. Rigour, meticulousness and perseverance are of course essential, but passion for Champagne also requires an open, curious, inventive mind, that is always looking for improvement. One must remain modest before the gifts of nature, and respect the character of each still wine, without wanting to "impose" a taste, but rather seeking to enhance the wine's natural qualities… Each generation has managed to progress with the times, trying out new practices in viticulture and oenology and selecting those that will enable the best grapes, and then the best wines to be obtained, ultimately offering the finest expression of their natural character, and always in the pursuit of excellence. The involvement of the family in all stages of production, from the vine to the glass, and the family's deep roots in Epernay, in the heart of Champagne, are two major strengths for the House. This love for Champagne and the passionate pursuit of finesse, character and elegance in the wines are authentic family values. Wine & Spirits 90 points - The Boizel family produces this wine when the harvest ripens sufficiently to produce a wine without dosage. They supplement it with 40 percent reserve wines, aging the blend for six years or longer on the lees. It shares the golden color of several of the firm's releases, its dry savor rounded by its smoky bottle maturity. Chalky minerality comes through in the end, making this thirst quenching with grilled langoustines. (Dec 2018). Wine Enthusiast 90 points - Long lees aging (six years) has been good to this wine. It has balanced the bone-dry character of the wine, allowing it to fill out. Now, it is a beautifully structured Pinot Noir-dominate wine, with a light tannic character as well as hints of almonds and plenty of citrus fruits. Drink now. (Dec 2017) The robe is golden and brilliant, with tiny longlasting bubbles. The bouquet is fine, intense and complex. Delicious aromas of small white peaches, white flowers and slightly roasted almonds joined by some candied notes. On the palate, the Ultime is pure, ample and of great structure. The freshness is well present and the maturity is confirmed by flavors of gingerbread and fruit marmalade. The final is pure, astonishingly long and harmonious.
