| Description: | OVID' S gravity-flow winery is nestled into the hillside overlooking Oakville and the surrounding vineyards. When the grapes are brought from our nearby vineyard, they are carefully sorted both before and after destemming so that only uniformly perfect fruit goes into our wine. Our winery was designed to correspond to each of our one-acre vineyard blocks. On a trip to Bordeaux for inspiration and ideas, we were intrigued by the concrete fermenters, which have been used by some of the great Chateaux. Inspired by their enthusiasm and success, we built small concrete fermenters at Ovid. French masons worked to ensure that the interior surface of the tanks was optimal. We also use wood fermentation tanks sized and built specifically for our vineyard blocks. We are fascinated by the added complexity that the two types of fermentation bring to our wines.
