Description: | Winemaking Notes: All farming is biodynamic with average yields around 35hl/ha. Harvesting is by hand. Grapes are destemmed and fermentation, and maceration last for approximately 60 days in concrete and wooden vats. The wine ages for about 12 months in old Burgundy barrels and 6 months in tank before bottling. It ages another three years before release. The Clos is made from an enclosed section of vines planted in 1962 close to the family home. Aged in old Burgundy barrels for 18+ months, this wine aims to build on Les Pensees strengths to render an utterly classic expression of Chinon terroir. |
