| Description: | Vintage:. • After a mild autumn and winter with little rainfall, the spring season in Chianti Classico began with warm and sunny weather which led to bud break occurring 10 days earlier than normal. • These climatic conditions remained unchanged during April, but changed during May with precipitation and cooler temperatures which did not influence the important phases of flowering and bud set that followed. • The summer was mainly warm and dry without peak temperatures that assisted in maintaining an excellent balance between vine development and the ripening of the grapes. • The harvest months were characterized by average weather with occasional rainfall and lengthy periods of sunshine and an excellent breeziness. These conditions favored an optimal final ripening of the grapes. Vinification:. • After the grapes were picked, the three varieties were fermented separately in stainless steel vats to preserve unique aromatic and flavor profiles. • Sangiovese was fermented with 10 days of skin contact, while Merlot and Syrah were given a bit longer period on their skins in order to create soft tannins and extract their fruity aromas. • After malolactic fermentation, the Sangiovese, Merlot and Syrah were blended and placed into large Slavonian oak casks. • After nine months of aging in oak, the wine was bottled and aged before release. Tasting Notes:. The 2016 Pèppoli is ruby red in color. On the nose are intensely fruity notes of cherries and red currants with integrated hints of violets and a delicate touch of toasted oak. The palate is fresh and savory with supple tannins and shows a finish and aftertaste which recall the sensations first felt on the nose. Blend:. 90% Sangiovese. 10% Merlot and Syrah. Alcohol: 13% |
