Description: | Paso Robles\r\nWinemaker Notes\r\n\r\nThe Cabernet Sauvignon is one of Eberle's flagship wines. The Estate Cabernet is full-bodied with rich black cherry and bright cassis notes. It has firm tannins with lush acidity. Wild blackberry, light pepper spice, mace and red flower aromas weave into a rather complex nose on this estate bottling. The palate is thick in weight, offering dark-red and black-fruit flavors as well as licorice and pepper spices. Subtle hints of cocoa and Br\u00fbl\u00e9e linger on the dry finish.\r\nFood Pairings - The Estate Cabernet complements roasted garlic, rosemary lamb shank. It pairs nicely with goat cheese stuffed portobello mushrooms. If you have a charcuterie board, try this wine with a smokey blue cheese or chocolate truffles.\r\n\r\nAbout Eberle Winery\r\nGary Eberle, a native of Pittsburg, Pennsylvania, started his college career in 1962 at Pennsylvania State University, where he balanced between being a defensive tackle for the Penn State Nittany Lions and an undergraduate biology student.\u00a0 After graduating with a Bachelor of Science in Biology, he then attended Louisiana State University (lsu) for graduate work in cellular genetics.\u00a0 His success earned him a National Science Fellowship to Charity Hospital in New Orleans, Louisiana, where one of his professors introduced him to the decadent world of food and wine. After tasting first and second growth Bordeaux from his professor\u2019s cellar, Eberle quickly took a keen interest in Cabernet Sauvignon.\u00a0 It was then he began envisioning the creation of an American wine that would rival those of Bordeaux.\u00a0 He soon found himself on his way to California where he enrolled in the Enology Doctorate Program at the University of California Davis.\r\nEberle Winery was not Gary Eberle\u2019s first wine venture when he arrived in Paso Robles, California. After finishing his coursework for a Ph.D. in Enology and Viticulture at U.c. Davis, Eberle moved to Paso Robles and began his career by co-founding the Estrella River Winery in 1973. After several successful years as the winemaker, Eberle refocused his attention and desire to produce premium, small production wine.\u00a0 Moving only a few miles down highway 46, Eberle soon started his own prestigious label which debuted officially with the release of Eberle\u2019s flagship wine, the 1979 Cabernet Sauvignon. |
