The wine had a three day cold soak to help extract maximum color and was fermented on skins for 9 days. It was then aged in small oak with 25% new oak being a blend of french, European ad American. Just enough oak to add complexity and enhance the fruit but not over power it. For this vintage I added some Malbec. 2022 vintage produced Cabernets at lower alcohol with slightly more herbaceous fruit than previous years. I felt the malbec added a roundness and berry fruit component that was needed for this vintage","grapeDescription":"","tastingNotes":"Dark, deep, purple in color is the first thing that captures your senses. Sexy in look!! Next is the aroma which is vibrant, fresh, lifting and enticing. Black currant, cassis, chocolate and a little bell pepper with a touch of vanilla and smokiness. Lastly its the palate that finally gets you all in. Silky, structured but soft for such a youthful wine and a cabernet. This is not Napa though so dont expect that huge palate and tannin. Alexander Vally Cabs are a little more elegant in structure.","openingAdvice":"Serve at room temperature or just below. If drinking soon after purchase best enjoyed with food. Will not go well with dessert or anything sweet if drinking young.","ageingAdvice":"Will easily keep for 15 years. Lovely drinking now with food especially. The wine had a three day cold soak to help extract maximum color and was fermented on skins for 9 days. It was then aged in small oak with 25% new oak being a blend of french, European ad American. Just enough oak to add complexity and enhance the fruit but not over power it. For this vintage I added some Malbec. 2022 vintage produced Cabernets at lower alcohol with slightly more herbaceous fruit than previous years.
